    摘要:

    采用鼠伤寒沙门氏菌TA98和TA100二个突变菌株,加哺乳动物肝微粒体酶对五种水产食品是否具有致突变性所进行的试验。实验结果表明:五种水产食品中烟熏鱼对TA100菌株有诱变作用,说明这种水产食品含有可引起DNA发生碱基对置换突变的化合物。提示在鱼肉烟熏加工过程中,有可能产生多环芳烃类(PAH)化学致癌物。

    Abstract:

    Five different kinds of canned fish were tested on petri plates with two specially constructed mutants of Salmonella typhimurium——TA98 and TA100(Ames Test).Mutagenic activity was detected in the smoked fish of the five samples. It showed that this processed fish contained base-pair substitution mutagens which required metabolic activation.The smoked fish which was clearly positive in the test should be considered as potential human health hazards, and should be thoroughly tested in animal systems. These studies have shown that the smoked fish might possibly present traces of polycyclic aromatic hydrocarbons.
